Recipe: Lemon Rosemary Roasted Chicken

While putting together some photos for my press release, I put together a few dishes - here is the recipe for a beautiful yet easy Rosemary Lemon Roasted Chicken:

You'll need:

  • 1 Chicken
  • Extra Virgin Olive Oil
  • Fresh Rosemary
  • 3 Lemons
  • Salt and Pepper

Cut 1 lemon in half and place inside the chicken along with some rosemary. Rub about 1 tablespoon of Olive Oil onto the chicken and season with salt and pepper. Slice up one lemon and place on the outside along with some more rosemary. Place the chicken with lemon and rosemary into a large Ziplock bag and allow it to marinade for at least 2 hours (overnight is best).

Take out of Ziplock bag and place in a baking dish leaving the lemon and rosemary inside the chicken.  Slice up the final lemon and place the slices on the chicken.

Roast the chicken in an oven preheated at 350° F for about 1 hour or until the juices of the chicken run clear. If you're using a meat thermometer, the chicken's internal temperature should reach 165°.

Garnish with fresh lemon and rosemary.
